WFD? 12/8


Turtle Rice and Beef Enchilada Casserole.

This morning I:
  • cooked the rice
  • chopped all the veggies/herbs for the rice
  • cooked the ground beef with chopped onion and garlic
  • chopped the tomatoes
  • softened the corn tortillas
  • assembled the beef enchilada casserole
  • put everything in the refrigerator

Tonight I:

  • put the casserole in the oven to bake
  • sauteed the veggies for the rice
  • added the cold rice
  • added the dried herbs, salt, pepper, and fresh cilantro to the rice/veggie mixture
  • shredded some lettuce
  • ate.

I like having lettuce, tomatoes, and light sour cream on top of my enchiladas. The cool vegetables and sour cream sort of cut the heaviness and richness of the enchiladas.

I had a long, busy day today at the quilt shop learning a new needle-turn applique technique. It was fun. I'm enjoying the process.

I loved knowing that the majority of the cooking and cleaning up was already over and done with! I'm not really a morning person and getting dinner made before breakfast will probably take some getting used to, but it sure was nice to come home to a dinner that was mostly made.

  2. Today we traced our pattern on the back/wrong side of the background fabric, then basted the applique fabric on the front of the background fabric on the seam line. You pick out the basting one or two stitches at a time as you applique. My teacher said most of her more advanced students use this method. I dunno. I haven't done it enough yet to know if I like it that much. Last month we traced it on the front and learned cutwork and I liked that but it does waste a lot of fabric. If it turns out that I prefer that method, I'll get enough scraps to make a Dear Jane quilt pretty quick!@

  3. I used that technique. I had some trouble making curves, but I didn't persist. It's one of the methods I'm going to try again when I make my Bunny Hill quilt.

  4. I think the obvious question here is: what the hell is TURTLE rice?? hahaha I have never heard of this dish - and how many turtle are harmed in the making of said dish?? :o)

  5. Jen, turtle rice is a side dish that I concocted based on the spanish/mexican rice we used to get at Tortuga Cantina before they closed. Tortuga = tortoise or turtle or something like that. : )
    The recipe is on the MyFamily site, and I only put in as many turtles as I can catch! j/k - no turtles are in this rice. Just lots of vegetables and seasonings.
